I have never had Cajun food before. I have never cooked it nor even eaten it. I don’t know much about Cajun food. I have only heard of Jambalaya and gumbo. I’m keen to find out more of what is Cajun cooking. Thank goodness for Google 😛
I was contacted by Cajun Caleb. They specialise in a Cajun Spice mix that is amazing. According to them, Cajun cuisine hails from the Southern regions in America, Louisiana and Mississippi. Typically, Cajun food is spicy and rich and originated from the kitchens of the poor. Just right up my alley.
I was given packets of their Cajun Spice Mix to try. The recipe is on the actual packet so it’s dead easy to make for people, like myself that have never cooked with these type of spice mixes before. They use the spice mix on seafood but I can see myself using the rest of the mix on chicken or pork.
Prawn with Caleb sauce
Sprinkle the Caleb Spice generously on 2 kgs of raw prawns. Steam the prawns for about 5minutes or until prawns turn pink.
Meanwhile make the Caleb sauce.
- 1 cup butter
- 1/2 cup fresh minced garlic
- 1 tbs caleb spice
- 2 tbs fresh lime juice
- Over a low heat, melt the butter in a small saucepan.
- Add the garlic then simmer for 2 minutes
- Add the Caleb spice. Mix well and simmer for 1 minute
- Add lime juice to finish
- In a bowl, mix the cooked prawns and the Caleb Sauce together.
- Serve with wedges of lime juice and cooked corn cobbs and steamed rice.
